festive fall dinner

fall is a fantastic time for entertaining. the mood is festive and people have settled into their routines and are looking for some fun! i get so inspired by the colors and smells of fall! i like to keep things spicy and interesting in the kitchen. hot mulled cider is a great way to start the evening and i found these fantastic mugs from anthropologie that would be a great way to serve it. for appetizers, i'll be serving jalapeno poppers topped with a spicy horseradish sauce. i'll also be setting out a tray from dean and deluca with pistachios and a cranberry nut mix. for the entree, i'll be serving bumblebee stew, a recipe i adapted from a favorite lunch spot. with it, i am making green chili cornbread muffins. i am obsessed with these tulip patisserie liners, which really elevate the look. for dessert, i am serving a pumpkin chocolate chip bundt cake, which is decadent with dark chocolate chips! i'll pair that with jacques torres’ wicked hot chocolate, a spicy treat! yum! cheers!

hot mulled cider

2 gallons apple cider (huber’s is my favorite)

4 cups spiced rum

1 package mulling spices (i love dean and deluca’s blend with dried orange peel)

star anise

cinnamon sticks for garnish

simmer all ingredients on low

serve in mugs garnished with a cinnamon stick

 

jalapeno poppers with horseradish sauce

24 fresh whole jalapenos

1 cup extra sharp cheddar

1 cup panko bread crumbs crushed

4 eggs beaten

1 teaspoon chili powder

½ teaspoon salt

1 clove garlic crushed

core jalapenos, removing all seed and cut in half

roast in the oven at 350 degrees until lightly charred and tender

on a baking sheet lined with parchment paper, arrange each half with the outside facing down

in a bowl beat eggs and add cheese, breadcrumbs, garlic and seasonings

place a small spoonful of the mixture in each pepper half

bake at 350 degrees until tops are golden and crisp, about 10-12 minutes

 

horseradish sauce

1 cup sour cream

½ cup prepared horseradish

¼ cup mayonnaise

½ teaspoon chili powder

1 teaspoon salt

whisk all ingredients and chill

 

bumblebee stew

serves 12

4 cans black beans, drained and rinsed

4 large tomatoes chopped

2 yellow onions chopped

4 cloves of garlic chopped

8 ears of sweet corn

1 stick of butter

1 cup Mark’s Feed Store Original BBQ sauce

¼ cup tomato paste

¼ cup sugar in the raw

½ teaspoon cayenne pepper

1 teaspoon chili powder

6 cups rice cooked

2 green onions chopped fine

cut corn from cob over a wide bowl. in a shallow, wide skillet melt 1 stick of butter, add 2 cloves of chopped garlic and chopped yellow onions. cook until translucent. add corn and tomatoes. cook until both have soft texture. add black beans, tomato paste, bbq sauce, sugar and spices. simmer on low for 30 minutes, stirring frequently. serve over cooked rice and garnish with green

 

green chili cheddar cornbread muffins

makes 24 muffins

4 tablespoons butter

2 cups flour

2 cups cornmeal

1 cup extra sharp cheddar cheese shredded

1 cup buttermilk

½ cup canola oil

4 eggs

2 teaspoons salt

2 tablespoons baking powder

1 small can chopped green chilis, drained

¼ cup agave nectar

in a small pan, melt butter

in a large bowl combine all remaining ingredients and stir until consistent texture

stir in melted butter

line 2 muffin trays with tulip patisserie liners (these can be found at world market)

fill liners half full

bake at 350 degrees for 15 minutes

serve with butter

 

chocolate chip pumpkin bundt cake


bundt cake

3 cups flour

3 cups sugar

1 can pumpkin

4 eggs

½ cup canola oil

½ cup water

1 teaspoon each ground cinnamon, ground nutmeg, ground cloves and ground allspice

2 teaspoons baking powder

2 teaspoons salt

10 ounce bag ghirardelli 60% cacao bittersweet baking chips

beat eggs, add all ingredients and mix until there are no lumps

bake at 350 for 25-30 minutes

cool completely on rack

when at room temperature drizzle with glaze

 

glaze

1 ½ cups powdered sugar

2 ½ tablespoons milk

¼ teaspoon vanilla

¼ teaspoon salt

1 teaspoon melted butter

whisk all ingredients until even consistency

served with jacques torres’ wicked hot chocolate, a blend with cinnamon, allspice and chipotle and ancho chilis.
