the spring is a magical time in kentucky. the skies are so blue and the flowers are in bloom. the clouds are light and puffy and it seems as though anything is possible and the best is yet to come. this spirit of rebirth and awakening is such a happy reason to celebrate.

i like to keep the décor bright and fun, and keep the playlist happy to set a sunny tone. i like to start the celebration with fun and fresh blood orange mimosas. for brunch i will serve a few different types of quiche. the sides will be roasted new potatoes, marinated asparagus, a light salad with edible flowers and fresh fruit. i will finish things off with a flourless chocolate torte, garnished with raspberries and mint leaves.

Sofia Blanc de Blancs

blood orange mimosas


- 1 chilled bottle sofia blanc de blancs

- 1 1/2 cups chilled fresh squeezed blood orange juice

- 3 tablespoons patron citronge


- mix in a pitcher and serve chilled, garnished with blood orange twists

Roasted New Potatoes

roasted new potatoes


- 2 pounds new potatoes

- 1/4 cup olive oil

- 2 cloves of garlic, chopped

- fresh rosemary


- bake in a 375 degree oven for 30-40 minutes until golden

Marinated Asparagus

marinated asparagus

- 2 bunches asparagus

- blanch asparagus and place in an ice water bath

- when chilled top drain thoroughly and top with vinaigrette and lemon zest

simple french vinaigrette

- 1/2 cup olive oil

- 1/2 cup champagne vinegar

- 2 tbsp. dijon mustard

- 1 tbsp. herbes de provence

- cracked salt and pepper to taste

Edible Flowers

green salad with edible flowers / arugula / pine nuts / shaved parmesan / slivered artichoke hearts / lemon vinaigrette / violas

edible flowers / great choices are calendula , pansies, carnations, bachelor’s buttons, or violas


fresh fruit / blackberries / kiwi / strawberries / granny smith apples / peaches / pineapple




- store bought pie or tart crust

- 5 eggs

- i cup whole milk

- your choice of vegetables and cheese

- salt and pepper to taste


- form store bought tart crust into your 10 inch pie pan and cook for 25 minutes in a 375 degree oven

- in a bowl combine 5 eggs, 1 cup whole milk and your choice of ingredients, and salt and pepper to taste, mix thoroughly , fill pie pan and bake for 40 minutes in a 325 degree oven, then cool

Flourless Chocolate Cake

flourless chocolate torte


- 12 ounces 60% cacao bittersweet chocolate
- 1/2 cup unsalted butter
- 8 large eggs, separated
- 1/2 cup granulated white sugar
- 1 teaspoon pure vanilla extract
- 1 pinch of salt


butter the bottom of a 9-inch spring form pan / line the bottom of the pan with parchment paper / butter the parchment paper / melt the chocolate and butter in the top of a double boiler over lightly simmering water / stir until smooth / remove from heat.

combine the egg yolks, 2 tablespoons of the sugar, the vanilla, and salt in a medium bowl / beat lightly until well combined / add the egg mixture to the chocolate, 1 tablespoon at a time, whisking continually / in a separate bowl, beat the egg whites and the 6 remaining tablespoons of sugar until fluffy / transfer the chocolate mixture to a large bowl, pour the egg white mixture on top, and carefully fold it in / spread the batter in the prepared pan / bake for 30 to 35 minutes, in a 350 degree oven / cool for one hour.

dust with powdered sugar and garnish with raspberries and mint leaves.
