Vegetarian French Onion Soup

We all need some go-to recipes that are sure to please. With snowy weather on the horizon, I have been thinking about warm winter soups. This simple classic is a great weeknight supper! This recipe for Vegetarian French Onion Soup is delicious and perfect for a chilly evening! The fresh thyme and red wine add great flavor. Serves 4

Ingredients:

3 Vidalia onions

1 stick of butter

1 cup of red wine

1 tablespoon of fresh thyme

1 teaspoon of kosher salt

1 teaspoon of sugar

4 slices of French baguette

8 slices of provolone

1 box of vegetable broth

Instructions:

Sauté the onions in butter over medium heat.

Stir frequently so that onions slowly caramelize.

When onions are lightly browned, add the broth.

Add the herbs and seasonings.

Add the red wine and bring it to a light boil.

Toast baguette slices and top them with cheese.

Melt cheese under the broiler.

Ladle soup into bowls, top with toast, and garnish with a fresh thyme sprig.
