vegetarian creole gumbo



vegetarian creole gumbo

this recipe is super light and delicious! this will definitely warm you up and has a kick too! you’ll definitely want to keep this on file for mardi gras!

2 tablespoons butter

2 shallots sliced

1 cup sliced celery

5 mini sweet peppers sliced

1 zucchini chopped

3 tomatoes chopped

2 cloves of garlic minced

2 cups vegetable broth

½ teaspoon dried basil

½ teaspoon dried thyme

½ teaspoon dried oregano

½ teaspoon cayenne

1 teaspoon paprika

a few dashes of tabasco

2 cups cooked rice

saute shallots and garlic in butter until translucent

add in remaining vegetables and cook until tender

add broth and spices and cook until gumbo has thickened and reduced

serve over cooked rice

add more tabasco to your desired heat
