thanksgiving side dishes part two



broccoli casserole

there are some side items that it would not be thanksgiving without, and this is one. who doesn’t love broccoli casserole. it’s been one of my favorites since I was a child. this recipe is classic and does not disappoint. i also have a great buttermilk dressing recipe. it’s great with greens and sprouts. simple and tasty!

broccoli casserole

1 ½ pounds broccoli trimmed into spears

1 yellow onion diced fine

1 can cream of mushroom soup

1 cup mayo

1 cup cheddar cheese

2 eggs beaten

i sleeve ritz crackers crushed

4 tablespoons butter melted

cook broccoli until tender

in a bowl mix eggs, soup, mayo, cheese and onion

drain broccoli and arrange in a lightly greased casserole

top with sauce mixture

sprinkle with cracker crumbs

drizzle melted butter over top

bake in a 350 degree oven for 30 minutes or until bubbling and golden brown

zesty buttermilk dressing

1 cup buttermilk

½ cup mayo

½ teaspoon chives

½ teaspoon thyme

½ teaspoon paprika

salt and pepper to taste

in a ball jar shake all ingredients until creamy consistency

i love this over simple greens topped with crunchy sprouts
