thanksgiving side dishes part one



creamed spinach

i have been seeing mouthwatering images of gorgeous thanksgiving dinners for the past few weeks. i decided to dream up my own favorite side items. i love pretty produce and creating these recipes was fun! creamed spinach and scalloped fingerling potatoes are fun sides that everyone will enjoy! these takes are simple and classic!

creamed spinach

serves 8

16 ounce box fresh baby spinach

5 cloves garlic minced

4 ounces aged white cheddar finely grated

4 tablespoons butter

3 tablespoons flour

1 cup 2% milk

½ teaspoon nutmeg

salt and pepper to taste

boil spinach until wilted but not overcooked

drain and remove all water possible by pressing spinach against a fine mesh colander

melt butter and saute garlic in it

cook flour with butter until lightly browned

whisk to prevent lumps

remove from heat and add milk

add cheese stirring frequently

cook sauce over low heat until it become thick and rich

add spices

stir in spinach and serve

 

scalloped fingerling potatoes

scalloped fingerling potatoes

serves 8

1 bag fingerling potatoes

1 cup extra sharp cheddar cheese grated

½ cup extra sharp cheddar cheese for garnish

1 cup 2% milk

3 tablespoons butter

3 tablespoons flour

½ cup fresh chives chopped

salt and pepper to taste

use a mandoline to slice potatoes thin

melt butter and add flour, mix and lightly brown

remove from heat and add milk

whisk to prevent lumps

add cheese and cook over low until sauce becomes thick and rich

add in spices and stir

in a lightly greased casserole arrange half of the potatoes

top with sauce

do the same with the remaining potatoes

top with cheese and chives

bake at 350 degrees for one hour
