rice stuffed green peppers



stuffed bell peppers with wild rice and spinach

serves two

1 green pepper

1 tomato chopped

1 extra large shallot

½ pound baby spinach

2 tablespoons olive oil

½ bunch fresh basil cut in a chiffonade

cracked sea salt and pepper to taste

1 pouch microwavable long grain and wild rice mix

½ ball fresh mozzarella sliced

cut pepper in two and trim it

boil in salted water for 15 minutes, until tender

set pepper in a small casserole

saute shallots in olive oil until tender

add spinach, tomatoes and basil

saute until tomatoes have created a sauce

cook rice mix in the microwave for 90 seconds

add rice to spinach mix and thoroughly combine

scoop rice mixture, divided in half into each pepper half

top with mozzarella cheese

bake for 10 minutes at 350 degrees
