pappardelle and vodka sauce

pappardelle pasta and vodka sauce

when i was at lotsa pasta the other day i picked up this pretty pappardelle pasta and thought vodka sauce would be perfect with it. my kiddos love this sauce and sometimes it’s nice to have a meal we all want to eat! i also prepared caesar salads with vegetarian dressing. it turned out to be light and fresh!

vodka sauce

serves 8

2 ounces butter

1 large onion chopped

3 cloves garlic chopped

1 can crushed tomatoes

1 can tomato sauce

½ cup vodka

1 cup heavy cream

1 cup parmesan

2 teaspoons salt

1 teaspoon black pepper

1 teaspoon basil

1 teaspoon oregano

(add crushed red pepper for a kick)

saute garlic and onion in butter until translucent

add tomatoes, tomato sauce and spices

reduce heat and add cheese, cream and vodka

cook on low until cheese is melted and the sauce has a creamy consistency

serve over pappardelle pasta (again a lotsa pasta find)

garnish with freshly grated parmesan

juice of 3 lemons

¼ cup worcestershire sauce

¼ cup dijon mustard

1 cup extra virgin olive oil

3 garlic cloves minced

1 teaspoon onion powder


6 slices of baguette cubed

toss in olive oil, salt, pepper and italian spices

bake in a 350 degree oven until golden

wash and trim a small head of romaine lettuce

garnish with caesar dressing, fresh grated parmesan, croutons, and fresh cracked black pepper
