brunch eggs

my grandmother made these brunch eggs at the holidays and they are fantastic! i make them every christmas for my husband and i. it makes me think of her and how much i adored her. she was my most special family member and i love carrying on her traditions! they are similar to eggs sardou and sensational!

six eggs

six slices of muenster cheese

2 tomatoes sliced thin

2 onions sliced thin

2 green peppers sliced thin

⅓ cup parsley finely chopped

3 english muffins buttered and toasted

2 tablespoons butter

in an electric skillet saute onions in butter until they are translucent

add peppers and cook until they are tender

add tomatoes and ¼ cup water

cover and cook until tomatoes are tender

add parsley

use the back of a spoon to make 6 indentions, evenly spaced

crack eggs and place each egg in slot

cover and cook until the eggs are firm

place a slice of cheese on each egg and cover until cheese is melted

serve each each egg on a buttered and toasted english muffin

i love to serve these with mimosas made with fresh squeezed orange juice!

mimosas are great for brunch
